Ingredient Notes
Here’s a quick overview of the key ingredients for this recipe. For the full list of ingredients and exact measurements, be sure to check the recipe card at the bottom of this post.
- Brie wheel: Use an 8-ounce round of brie with the rind on so the cheese holds its shape as it bakes and becomes soft and spoonable in the center.
- Brown sugar: Light brown sugar melts more gently than dark and won’t overpower the cranberry. If it’s lumpy, break it up first so it sprinkles evenly over the nuts.
- Pecans: Buy whole or halved pecans and chop them yourself for the freshest flavor. If they have been stored for a while, give them a taste first to be sure they are still sweet.
- Cashews: Choose roasted, unsalted cashews so you control the salt in the dish and chop them coarsely.
- Cinnamon: Ground cinnamon fades over time, so if yours is very old, this is a good recipe to open a fresh jar for the best warm holiday aroma.
- Nutmeg: Ground nutmeg is fine here, but if you keep whole nutmeg on hand, grate just a pinch directly into the nut mixture for a brighter, more fragrant flavor.
- Cranberry preserves: Look for cranberry preserves or jam with visible fruit pieces rather than a very smooth jelly, so you get a pretty texture on top. If you do not have it, this recipe is just as lovely as baked brie with jam like fig, apricot, cherry, or raspberry.
How To Make Baked Brie and Preserves
Prep the Brie
Unwrap the brie, leave the rind on, and place the wheel in the center of a small baking dish or pie plate with parchment paper.

Mix Nuts, Bake Brei, & Add Preserves
In a small bowl, stir together the brown sugar, chopped pecans, chopped cashews, cinnamon, and nutmeg until the nuts are evenly coated.
Pile the nut mixture on top of the brie. Slide the dish into the oven and bake for 12 to 14 minutes, until the brie feels soft when you gently press the center, and the nuts smell toasted.
Remove it from the oven and spoon the cranberry preserves over the warm nut topping, letting some run toward the edges. Bake for 2 to 3 minutes more, then let the baked brie rest a couple of minutes, and lift it by the parchment onto a serving platter.

This is lovely with a mix of sturdy crackers, pretzels, sliced baguette or crostini, and plenty of apple and pear slices, and you can nestle it onto a small cheese or charcuterie board with grapes, nuts, and a few simple nibbles if you want to make it feel extra special.
Variations, Substitutions, and Recipe Tips
Dietary Modifications: If you are serving someone with a nut allergy, leave the pecans and cashews off entirely and bake the brie with preserves on top only.
Flavor Enhancements: Add a light drizzle of honey or maple syrup after baking if you want extra sweetness and shine.
Add-In Options: For extra color and texture, sprinkle a few dried cranberries or chopped dried figs over the hot brie right before serving.
Simple Substitutions: You can use any nuts you have on hand, such as pecans, cashews, walnuts, or pistachios, and remember that this works just as well if you make it as baked brie with jam, crock pot cranberry sauce or a savory cranberry chutney.
Tips for Recipe Success: Fully preheat your oven, start checking the brie around 12 minutes, always bake on parchment for easy lifting, and let the cheese rest a few minutes so it is gooey but not too hot when guests dig in. Ingredients
- 1 8 oz brie, round wheel with rind on

- 1/4 cup cashews, coarsely chopped
- 1/2 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/3 cup Cranberry Preserves
Instructions
- First thing, preheat the oven to 375 degrees. Line a pie pan or other small baking dish with a square of parchment paper. This makes it easier to transfer to a serving plate.
- Take the paper wrapper off your round of brie. Leave the rind on. This helps hold the cheese together as it melts. Don’t worry, the rind is edible.1 8 oz brie
- Place brie on the parchment-lined pan.
- Combine nuts, sugar, cinnamon, and nutmeg in a small bowl. Stir until combined well. This will be your crunchy nuts for the topping.1/4 cup brown sugar, 1/4 cup pecans, 1/2 teaspoon cinnamon, 1/8 teaspoon nutmeg, 1/4 cup cashews
- Top with nut mixture, trying to keep most of it on the top rind of the brie wheel.
- Bake brie for 12 to 14 minutes. The brie should become soft and spongy when you push on the wheel.
- Next, top the nut mixture with the Strawberry with Champagne. Baked for 2 to 3 more minutes. When the jam starts to drip a bit down the sides, remove it from the oven.1/3 cup Cranberry Preserves
- Carefully transfer brie to a serving platter.
Gina’s Notes and Tips
- Room Temperature: Serve the baked brie within about 2 hours of baking, and set it out close to the time guests will eat so it stays warm and inviting.
- Refrigerator: Let leftovers cool to room temperature, then refrigerate in an airtight container for 2 to 3 days; the firm cheese is still delicious spread on toast or crackers.
- Reheating: Warm leftovers in a 325-350°F oven for 5 to 10 minutes until soft again, or reheat small portions in 15 to 20-second microwave bursts just until loosened.
