How To Make This Cloud Bread
Prep & Whip Egg Whites
Preheat your oven to 300°F (or convection setting if available). Line two baking sheets with parchment paper.
In a mixing bowl, beat egg whites with cream of tartar until stiff peaks form. You’ll know it’s ready when the whites stand tall on the whisk without drooping.


Mix the Yolks
In another bowl, beat the cream cheese until smooth. Add the yolks one at a time. Stir in Italian seasoning, salt, and garlic powder.


Combine
Gently fold the whipped whites into the yolk mixture. Go slowly, lifting and folding rather than stirring to keep it airy.


Shape
Drop ¼ cup portions onto the baking sheets and spread into 4-inch circles about ¾-inch thick. Leave a little room between each one.

Bake
Bake until golden and firm, 15 to 18 minutes in convection, or up to 30 minutes in a standard oven. The tops should be golden and the centers set.
Hosting Tip: You can make these the night before a brunch. Just cool completely and store in an airtight container, then reheat gently before serving.

- Room Temperature: Best eaten fresh, but can sit out covered for 1 day.

- Freezer: Freeze on a baking sheet, then transfer to a bag for up to 1 month.
- Reheating: Warm in a toaster oven or 300°F oven for 5 to 7 minutes to crisp them slightly. An air fryer set to 300°F for 3 to 4 minutes also works well. Avoid microwaving as it softens them too much.
