Hosting Tip: If I’m serving brunch, I like to bake a double batch and set them out in a basket with little cards that say “Try me with eggs” or “Spread me with jam.” It always sparks conversation around the table.

How To Make This Cloud Bread

Preheat your oven to 300°F (or convection setting if available). Line two baking sheets with parchment paper.

In a mixing bowl, beat egg whites with cream of tartar until stiff peaks form. You’ll know it’s ready when the whites stand tall on the whisk without drooping.

In another bowl, beat the cream cheese until smooth. Add the yolks one at a time. Stir in Italian seasoning, salt, and garlic powder.

Gently fold the whipped whites into the yolk mixture. Go slowly, lifting and folding rather than stirring to keep it airy.

Drop ¼ cup portions onto the baking sheets and spread into 4-inch circles about ¾-inch thick. Leave a little room between each one.

Bake until golden and firm, 15 to 18 minutes in convection, or up to 30 minutes in a standard oven. The tops should be golden and the centers set.

What does cloud bread taste like?

On its own it’s mild, like a soft egg-based bread. You can make it savory with herbs or sweet with vanilla and cinnamon.

Why did my cloud bread deflate?

Most often it’s from under-whipped egg whites or overmixing. Be sure to whip to stiff peaks and fold gently.

Variations, Substitutions, and Recipe Tips

Savory Spin: Sprinkle Parmesan or cheddar on top before baking, or fold a little shredded cheese into the yolk mixture. A pinch of onion or garlic powder also deepens the flavor.

Sweet Cloud Bread: Add a teaspoon of vanilla and a pinch of cinnamon to the yolk mixture. For a TikTok-style twist, fold in a drop of food coloring and a spoon of sugar.

  • Refrigerator: Store in an airtight container up to 3 days. Place a sheet of parchment between layers so they don’t stick together.
  • Freezer: Freeze on a baking sheet, then transfer to a bag for up to 1 month.
  • Reheating: Warm in a toaster oven or 300°F oven for 5 to 7 minutes to crisp them slightly. An air fryer set to 300°F for 3 to 4 minutes also works well. Avoid microwaving as it softens them too much.
