I start by preheating the oven to 400°F and buttering my 9×13-inch baking dish. A greased dish keeps the cheese from sticking and makes cleanup easier.

Lay half of your tomato slices in the bottom. It’s okay if they overlap a little; that helps the flavors mingle. Sprinkle with half the sugar, salt, pepper, Creole seasoning, garlic powder, and lemon pepper. Then add half the onions and half the cheese.

  • 4 to 5 green tomatoes, sliced 1/3-inch thick (you will need enough tomatoes to cover your baking dish with two layers)
  • 1 teaspoon sugar, divided
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1/2 teaspoon seasoning, Creole or Cajun, divided (add more if you like it spicy)
  • 1/2 teaspoon garlic powder, divided
  • 1/2 teaspoon lemon pepper, divided
  • 1 cup sweet onion, chopped, like Vidalia, divided
  • 2 cups shredded cheese, cheddar or a cheese blend works well, divided
  • 1 Ritz crackers, sleeve, about 30 crackers, crushed
  • 1/2 cup butter, melted

Instructions
 

Prep

  • Preheat the oven to 400 degrees Fahrenheit. Grease a 9 x 13-inch casserole dish with butter or cooking spray.

Layer Ingredients

  • Layer the first half of the sliced tomatoes in the bottom of the dish. It’s fine if the slices overlap.
    4 to 5 green tomatoes
  • Sprinkle evenly with half of the sugar, salt, black pepper, Creole or Cajun seasoning, garlic powder, and lemon pepper.

  • Add half of the chopped onions on top of the tomatoes, then sprinkle with half of the shredded cheese.

  • Repeat the layers: add the remaining tomato slices, seasonings, onions, and cheese.

Topping

  • Place the Ritz crackers in a plastic bag, seal and crush them to fine crumbles.

  • Add cracker crumbs to butter and toss for 1 minute until all crackers are coated with butter.
  • Sprinkle the buttered crumbs over the top of the cheese layer.

Bake

  • Cover the casserole with foil and bake for 45 minutes.
  • Uncover and bake for an additional 15 minutes, or until the top is golden and crispy.
