Sometimes I get a craving for crispy fish tucked into warm tortillas and absolutely drenched in creamy Baja sauce. This easy Baja sauce for tacos and other Mexican recipes is the one I keep coming back to whenever I’m craving that zesty Taco Bell-style flavor I grew up with.

This creamy Baja sauce comes together in about 5 minutes and instantly turns simple Mexican food into better-than-restaurant-style. It’s made with simple ingredients, skips all the bottled-sauce preservatives, and can be adjusted from mild to spicy, so everyone at your table is happy. Prep, Blend, Chill, and Serve Baja Sauce
Seed and chop the red bell pepper, finely dice the onion, and measure the jalapenos so everything blends smoothly.
Add the peppers, onion, mayonnaise, vinegar, salt, sugar, mustard powder, crystallized lime powder or lime juice, garlic powder, and cumin to a blender. Blend for about 1 minute, or until the sauce is very smooth, or use a food processor and scrape down the sides as needed. Pour into a jar and chill for one hour in the fridge.

Ingredients
- 1/4 cup red bell pepper, seeded and chopped
- 2 teaspoons pickled jalapeno
- 2 tablespoons onion, diced
- 1 cup mayonnaise
- 1 tablespoon vinegar
- 1/4 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon mustard powder
- 1/4 teaspoon crystalized lime powder , or 1 teaspoon fresh squeezed lime juice
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cumin
Instructions
- Place bell pepper, pickled jalapenos, onion, and the rest of the ingredients into a Vita-Mix blender. Note* If you do not have a good blender, add all the ingredients into the bowl of a food processor. You will need to scrape the sides of the bowl a few times to be sure the sauce is creamy and smooth.1/4 cup red bell pepper, 2 teaspoons pickled jalapeno, 2 tablespoons onion, 1 cup mayonnaise, 1 tablespoon vinegar, 1/4 teaspoon salt, 1/2 teaspoon sugar, 1/4 teaspoon mustard powder, 1/4 teaspoon crystalized lime powder, 1/4 teaspoon garlic powder, 1/4 teaspoon cumin
- Blend on high for 1 minute or until sauce is smooth and creamy. The puree peppers and onion should be in small pieces that they emulsify into the sauce.
- Place the sauce in a glass jar with a tight-fitting lid. Refrigerate for a few hours or overnight in the refrigerator for the best flavor.
Gina’s Notes and Tips
- Room Temperature: Keep this mayonnaise-based sauce out at room temperature no longer than about 2 hours; for outdoor parties, nest the jar in a bowl of ice to keep it cool.
- Fridge: Store Baja sauce in an airtight container in the refrigerator and use within 3 to 5 days, stirring or shaking before each use so any settled spices mix back in.
- Freezer: Do not freeze this sauce, because mayo-based sauces separate and turn watery once thawed. It is best to make a fresh batch when needed.
