Pistachio Cranberry Cookies

Pistachio Cranberry Cookies


A yummy combination of pistachio and cranberry makes will make this cookie a family favorite.



  • 1 cup softened butter
  • 1/3 cup powder sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 2 cups flour
  • 1/4 cup instant pistachio pudding mix
  • 1/2 cup dried cranberries
  • 2 cups finely chopped pecans (optional)
  • green food coloring (optional)


  1. Cream butter and sugar in a mixing bowl
  2. Add egg,vanilla, almond extract and mix well
  3. Add flour and pudding, mix well
  4. If you would like a greener cookie drip a few drops of green food coloring and mix well
  5. Fold in cranberries
  6. Place spoon size cookie dough balls on lightly greased cookie sheet
  7. Bake 350 degrees for 10 to 12 minutes
