My list is continually growing because I’m a little old school in that I love sitting down with a book in my hand browsing through and marking all the delicious looking recipes I want to try.

Today it is simple to hop on Pinterest and search for a great plant-based diet recipe however there is something special about holding a physical cookbook, learning the story behind the recipe and getting to know the author’s story. It amazes me the variety of ways people have come to choose a plant-based diet for their lifestyle. Many are due to a disease in their body, some just wanted to feel better and others realized they were going to be sick if they did not make a lifestyle change.

An Instant Pot has become my new favorite kitchen appliance. It creates meals super quick compared to stove top or oven cooking. I also like how it seals in flavors to create delicious meals.
So when I saw The Ultimate Vegan Cookbook For Your Instant Pot by Kathy Hester it magically jumped into my cart. She does a great job at the beginning of the book teaching you how to use an Instant Pot if you are a beginner and then starts you out with five easy recipes to get you comfortable with the Instant Pot.
She then shares quick and easy homemade staples to save you money and then gives you chapters on beans, whole grains, vegetables, comforting one-pot meals, layered meals and of course Instant Pot desserts.

I picked up My New Roots, Inspired Plant-based Recipes For Every Season by Sarah Britton for several reasons, first being the delicious looking recipes. I loved her photography and the overall feel of this cookbook. Sarah has recipes that will help you make a delicious meal that also happens to be good for you. Her Skinny Dip White Bean Fondue is amazing.

I love this! Ill have to write some of these down for my birthday/Christmas wishlist! Our favorite cookbook (one I have used on a weekly basis) has been the Love Real Food cookbook by Katherine Taylor. It uses simple ingredients and every recipe has had great flavor and texture. Dirk has often commented on how good a recipe is only to be suprised that once again I cooked something vegetarian that he likes! He isn’t converted completely but we have been able to eat more plant based on a regular basis :)
