The key ingredients are chamomile and apple juice cooked on a low boil to a thick syrup. If you are sticking to a strict vegan diet, then this sweetener you will want to keep stocked in your pantry.

This is an easy recipe that only requires a few simple ingredients that you can use as a substitute for regular honey.

Instructions

This is a great recipe that you will want to make and keep on hand.

  1. Bring apple juice to a boil in a medium saucepan.
  2. As soon as apple juice reaches the boiling point, remove the pan from the heat. Place your chamomile with lemon tea into the apple juice. Allow the tea to steep for 5 minutes. *note, if you could not find chamomile with lemon, add fresh lemon juice.
  3. Remove the teabag and bring the heat back up to medium-high, so you have a low boil simmer.
  4. After the syrup has simmered for 20 minutes, start checking it every few minutes for desired thickness. To check the desired thickness, let the syrup drip from a chilled metal spoon. If the drippings are forming a string-like thread, it is done. This may take 25 to 35 minutes. Your goal is to reduce the liquid by 1/2.
  5. Allow mixture to cool to room temperature and then pour into a glass jar with a lid.

Tips

Be sure to keep your stove on medium heat during the reduction. You need to have a slow simmer for it to reduce properly to the desired consistency.

When testing the consistency of your vegan honey test it using a metal spoon. If it clings to the spoon and drips soft strings that float in the air a bit then it’s ready.

The easy way to infuse an authentic honey taste is to have chamomile tea with lemon. If you can’t find it with lemon, add a tablespoon of freshly squeezed lemon juice to your apple juice.

How to store

Keep your vegan honey in an airtight container such as a glass jar with a tight-fitting lid. You can store it at room temperature in your pantry since it has such a high sugar content. However, if you prefer a thicker syrup consistency, keep it in your refrigerator.
