Healthy Stuffed  Mushrooms

Why these are so good?

Vegan Stuffed Mushrooms are a perfect appetizer for your next party, full of garlic, toasted pecans, sundried tomatoes, spinach, and then topped with a citrus basil dressing.

Start with 12 to 14 white mushrooms medium to large in size. Do not wash with water, just wipe them clean.

Remove the stems. Toss the stems into you food pressor and chop into fine pieces. This will be the base of your filling.

Saute onions, garlic, chopped mushroom stems, spinach, and basil in a sauce pan.

Add chopped sun-dried tomatoes, salt, pepper, and pecans, sauteing for 1 minute. Remove from heat. Stuff caps and bake

Citrus Basil Dressing 1 tablespoon basil leaves, finely chopped 2 tablespoons orange juice 1/4 teaspoon garlic minced 2 tablespoons olive oil

Drizzle Citrus Basil Dressing over baked mushrooms. Top with chopped basil and serve warm.
