– 4 lbs. Russets potatoes  – 2/3 cup olive oil  – 4 cloves garlic   – 2 rosemary fresh sprigs   – 1 teaspoon lemon zest  – 1 cup vegetable broth  -1/4 tsp. crushed red pepper –  1/3 tablespoons salt  - 1 tablespoon for salt water and the rest for seasoning – 2 tbsp. parsley

In  a small saucepan, heat 2/3 cup olive oil on medium heat. Add the garlic, rosemary, lemon zest, crushed red pepper, and 1/4 tsp. salt,  stirring occasionally, for 2 minutes. Set aside
