Ingredients
  

  • 2 1/2 cups basil fresh leaves
  • 4 cloves garlic
  • 3/4 cup Parmesan cheese grated
  • 1/2 cup olive oil
  • 1/4 cup pine nuts
  • 1 cup parsley chopped fresh
  • 2 cups chickpeas canned
  • 3 tablespoons red wine vinegar
  • 3/4 cup feta cheese crumbled

Instructions
 

Pesto

  • Combine basil, garlic, Parmesan cheese, olive oil, and nuts in the bowl of a food processor.
  • Blend to a smooth paste.

Salad

  • Place chickpeas, pesto, vinegar in a bowl
  • Gently stir, making sure not to mash the chickpeas
  • Pour feta in the bowl and gently toss
