Vegan Honey Recipe

This easy Vegan Honey Recipe creates sweet light-colored nectar with a fruity flavor that has a hint of earthiness like honey harvested in the fall. With a few simple ingredients, you can make your own vegan honey to satisfy your sweet tooth.

  • 3 cups apple juice
  • 1 teabag chamomile tea with lemon
  • 2 cups white sugar
  • 1 tablespoon lemon juice fresh-squeesed. *note, you only need this if you could not find chamomile tea with lemon


  • Bring apple juice to a boil in a medium saucepan.
  • As soon as apple juice reaches the boiling point, remove the pan from the heat. Place your chamomile with lemon tea into the apple juice. Allow the tea to steep for 5 minutes. *note, if you could not find chamomile with lemon add fresh lemon juice.
  • Remove the teabag and bring the heat back up to medium-high so you have a low boil simmer.
  • After the syrup has simmered for 20 minutes start checking it every few minutes for desired thickness. To check the desired thickness, let the syrup drip from a chilled metal spoon. If the drippings are forming a string-like thread it is done. This may take 25 to 35 minutes. Your goal is to reduce the liquid by 1/2.
  • Allow mixture to cool to room temperature and then pour into a glass jar with a lid.


Be sure to keep your stove on medium heat during the reduction. You need to have a slow simmer for it to reduce properly to the desired consistency.
When testing the consistency of your vegan honey test it using a metal spoon. If it clings to the spoon and drips soft strings that float in the air a bit then it's ready.
The easy way to infuse an authentic honey taste is to have chamomile tea with lemon. If you can't find it with lemon, add a tablespoon of freshly squeezed lemon juice to your apple juice.
