Vegan Mashed  Potatoes 

Try this recipe, they are smooth, light, and fluffy with a hint of Tuscan herbs. These vegan mashed potatoes are so rich and tasty no one will miss the dairy.

– 4 lbs. Russets potatoes  – 2/3 cup olive oil  – 4 cloves garlic   – 2 rosemary fresh sprigs   – 1 teaspoon lemon zest  – 1 cup vegetable broth  -1/4 tsp. crushed red pepper –  1/3 tablespoons salt  - 1 tablespoon for salt water and the rest for seasoning – 2 tbsp. parsley
