Making the cashew cookie jar is so straightforward that even kids can do it. Simply ask your kids to layer the ingredients in the jar, and you might be shocked to see how creative they can be.

Preparation only takes seven minutes, and the cookies only need 12 minutes to bake. That’s a total of 19 minutes, which is quite a bit of time to spare!. You can also easily find the ingredients at your nearest grocery store and get bold to add some chocolate chips to the mix.

Ingredients Need To Make This Recipe

Here are the ingredients that you need to gather to make this delightful cashew cookie recipe.

  • All-purpose flour: This ingredient will give the structure of your cookies. For this recipe, you’ll need about a cup of all-purpose flour in making the flour mixture. 
  • Baking soda: This leavening agent is responsible for making your cookies fluffy and light. Prepare 3/4 teaspoon of baking soda for this recipe. Be sure your baking soda is fresh so the cookies rise well.
  • Cinnamon: To give that inviting aroma, I like to add 3/4 teaspoon of ground cinnamon. This spice elevates the nutty flavor of cashews.
  • Brown sugar: I like to achieve the chewy texture of my cashew cookies, so I use 1/2 cup of light brown sugar. This ingredient adds a caramel-like flavor to the cookies.
  • White sugar: You might think, “Why use two types of sugar for this recipe?” White or granulated sugar provides a clean, sweet taste, which provides a more nuanced flavor together with the caramel-like flavor of brown sugar. Prepare 1/2 cup of white granulated sugar for this recipe.
  • Old-fashioned oats: To make the cookies taste more nutty, I like to add 1-1/3 cups of oats. I recommend using rolled oats because they’re able to keep their shape during baking, hence providing a nice texture.
  • Cashews: Now, the star of this recipe is a cup of salted whole cashews. These nuts give that rich, slightly sweet, and nutty flavor of the cookies. They give that crunch to every bite.

Ingredients Needed When You Are Ready To Bake The Cookies

  • Butter: Don’t skimp; only use real butter, not imitation, for this recipe.
  • Vanilla Extract: About 3/4 teaspoon of vanilla extract will balance the sweetness of the cookies and add a rich aroma.
  • Eggs: As a binding ingredient, you’ll need one large egg and an extra large egg yolk.

How To Make Cashew Cookies

Now that you have the ingredients ready, it’s time to make cashew cookies, from assembling the dry mixture in a jar to baking them anytime.

  • In a bowl, whisk the all-purpose flour with the baking soda and ground cinnamon.

Start To Layer

  • Get a 1-quart glass jar and a funnel. With a funnel on top of the jar, add the flour mixture, then the brown sugar and white sugar.

  • Next, add the oats on top of the white sugar. 
  • Use the bottom of a small glass vase or a tall drinking glass to push down each layer as you fill the jar.

Top With Cashews

  • To finish the layer, add the whole cashew nuts. 
  • If you want to store the cookie mix for later use, seal the jar. Proceed to the next step if you want to use the cashew cookie mix and are ready to bake!

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a small bowl, whisk the melted butter and vanilla extract until fluffy. Add the eggs and whisk until fully mixed.
  • In a larger bowl, combine the egg mixture and the dry cookie mix from the jar to make the cookie dough. ​
  • Scoop a spoonful of cookie dough in a parchment-lined baking sheet. 
  • Bake for 12 minutes or until lightly browned.

Gina’s Tips For Recipe Sucess

  • Push down each layer to pack it in a jar. Use a drinking glass or simply your hand.
  • Don’t overmix the dough to prevent the cookies from getting tough.
  • If the cookie dough runs too soft, consider chilling it in the fridge for 30 minutes before scooping it out.

Variation Ideas

  • Nuts: You could change the cashews for toasted pecans, chopped walnuts, or macadamia nuts.
  • Mix-Ins: Layer in 1/2 cup of cashews and then a 1/2 cup of butterscotch chips, dark chocolate chips, or white chocolate chips.

Decorating The Jar For A Gift

I like to put a rubber-sealed canning jar lid on to help keep moisture out and then cover it with a plastic white jar lid that I buy at Walmart.

Storing Cookies In A Jar

  • 1 cup all-purpose flour
  • ¾ tsp. baking soda
  • ¾ tsp. ground cinnamon
  • ½ cup light brown sugar, packed
  • ½ cup sugar
  • 1 1/3 cups old-fashioned oats
  • 1 cup salted whole cashews

Additional Ingredients When Baking Cookies

  • cup butter
  • ¾ tsp. vanilla extract
  • 2 eggs large egg plus 1 large egg yolk, room temperature

Instructions
 

  • Whisk together the flour, baking soda, and cinnamon in a bowl.

  • Using a cookie scoop, drop tablespoonfuls of dough a 1/2 inch apart on parchment-lined baking sheets.
  • Bake until lightly browned, 10-12 minutes. Remove from pans and place on wire racks to cool.
