Ingredients
- 2 1/2 cups basil fresh leaves
- 4 cloves garlic
- 3/4 cup Parmesan cheese grated
- 1/2 cup olive oil
- 1/4 cup pine nuts
- 1 cup parsley chopped fresh
- 2 cups chickpeas canned
- 3 tablespoons red wine vinegar
- 3/4 cup feta cheese crumbled
Instructions
Pesto
- Combine basil, garlic, Parmesan cheese, olive oil, and nuts in the bowl of a food processor.
- Blend to a smooth paste.
Salad
- Place chickpeas, pesto, vinegar in a bowl
- Gently stir, making sure not to mash the chickpeas
- Pour feta in the bowl and gently toss
