Line a 10 x 12-inch baking sheet with parchment paper and lightly spray it with cooking spray.
Make Flatbread Mixture
Add eggs, cottage cheese, garlic powder, and Italian seasoning to a blender or food processor. Blend until the mixture is smooth.
2 large eggs, 1 cup cottage cheese, ¾ teaspoon garlic powder, 1 teaspoon Italian seasoning
Pour the blended mixture onto the prepared baking sheet and spread it evenly across the pan.
Bake
