This French onion pot roast simmers all day in a rich, from-scratch onion gravy, then gets finished with melted Gruyère and fresh parsley. It's a slow cooker French onion pot roast that tastes like a Sunday dinner with very little hands-on work.
Pat the chuck roast dry on all sides with paper towels. A dry surface browns better.
3 pounds chuck roast
Sprinkle the salt and pepper over the roast, making sure to cover every side.
1 ½ teaspoons kosher salt, 1 teaspoon black pepper
Sear the Roast
Set a large skillet over medium-high heat and add the olive oil.
2 tablespoons olive oil
Once the oil is hot and shimmering, add the roast. Let it sit without moving until a deep brown crust forms on the bottom.
Turn the roast and brown the remaining sides the same way. You aren't cooking it through here, just giving it extra flavor before it goes into the slow cooker.
Move the browned roast to the slow cooker.
Cook the Onions
Add the sliced onions to the same skillet. They may look like a ridiculous amount at first, but don't worry, they cook down quite a bit.
4 yellow onions
Cook for 8 to 10 minutes, stirring occasionally, until the onions soften and pick up the browned bits from the bottom of the skillet.
Add the garlic and cook for 1 more minute, just until you can smell it.
2 teaspoons garlic
Make the Onion Gravy
Sprinkle the flour over the onions and stir until it disappears into the onions.
2 tablespoons all-purpose flour
Cook for about 1 minute so the flour doesn't taste raw.
Slowly pour in the beef broth, stirring as you go and scraping up any browned bits stuck to the skillet. This is where all that good flavor is hiding.
2 cups beef broth
Stir in the Worcestershire sauce, balsamic vinegar, Dijon mustard, thyme, rosemary, and bay leaf.
Pour the onion mixture over the roast in the slow cooker.
Cover and cook on LOW for 8 hours. The beef is ready when it's fork-tender and pulls apart easily with a fork. If it resists, give it more time.
Add the French Onion Finish
Carefully move the roast to a cutting board and let it rest for 10 minutes.
Remove the bay leaf from the slow cooker and discard it.
For thicker gravy (optional), set the slow cooker to HIGH while the roast rests. Let the liquid cook uncovered for 15 to 20 minutes, stirring occasionally.
Shred the beef with two forks, or slice it.
Return the beef to the slow cooker and spoon plenty of the onions and gravy over the top.
Sprinkle the Gruyère over the beef. Cover and let it sit for a few minutes, just until the cheese melts.
1 cup Gruyère cheese
Finish with the parsley and tuck in a few pieces of crusty bread. Serve while everything is hot.
2 tablespoons parsley, 6 slices crusty bread
Notes
Slow Cooker Times
LOW: 8 hours (recommended for the most tender meat and best flavor)
HIGH: 4 to 5 hours
Make Ahead
The night before, slice the onions and store them in a tightly sealed bag in the refrigerator so the smell doesn't spread.
Mince the garlic and store it in a small airtight container in the refrigerator.
Measure the broth into one container, and the Worcestershire sauce, balsamic vinegar, Dijon mustard, thyme, rosemary, and bay leaf into another.
Sear the roast and make the gravy the morning you cook. The gravy depends on the browned bits from searing.
Substitutions
Shoulder roast in place of chuck roast
Swiss cheese in place of Gruyère
White onions (sharper flavor) or Vidalia onions (sweeter, more mellow) in place of yellow onions
Variations
Add 8 ounces of sliced white button mushrooms or baby bellas when you cook the onions.
Pile sliced leftovers onto toasted French bread with onions and cheese, and serve the gravy on the side for dipping.
Storage
Store leftovers in an airtight container in the refrigerator for 3 to 4 days.
Freezing
Freeze leftovers in a freezer container for up to 3 months.
Thaw in the refrigerator overnight before reheating (best option), or use the defrost setting on your microwave and reheat it right away.
Reheating
Oven: Place the leftovers in a casserole dish with a splash of beef broth. Cover and heat at 325 degrees Fahrenheit for 15 minutes, or until heated through to 165 degrees Fahrenheit in the center.
Microwave: Cover and heat in 30-second bursts, stirring between bursts, until heated through to 165 degrees Fahrenheit.
