Instructions
Prepare
Preheat the oven to 350 degrees Fahrenheit.
Spray the casserole dish with non-stick cooking spray or rub with butter.
Make the Base Layer
In a small bowl whisk together the sugar , 6 tablespoons of pineapple juice from a can of pineapple and flour.

Add in the drained pineapple chunks and stir.

Spread this mixture evenly across the bottom of the dish.
Layer
Spread this pineapple mixture in the bottom of the casserole dish.
Sprinkle the grated cheddar cheese evenly over the pineapple.

Make Topping
Combine crushed Ritz crackers and melted butter in a small bowl. Stir until the crackers are coated with the butter.
Top the casserole with the buttered cracker crumbs.
Bake the casserole
Bake for 30 minutes, or until the cheese is melted and the cracker topping is golden and crisp.

Store in the refrigerator for up to 3 days.To reheat: I like to reheat in the oven at 300°F for about 10 to 15 minutes, uncovered, to get the topping crisp again. You can also microwave individual portions for 1 to 2 minutes.To freeze: This casserole doesn’t freeze well due to the pineapple texture and cracker topping, so I recommend enjoying it fresh or within a few days.
