Ingredients
- 1/3 cup onion, diced small
- 2 teaspoons olive oil
- 1 tablespoon minced garlic
- 15 ounces alfredo sauce, Rao’s or your favorite brand
- 1/2 teaspoon poultry seasoning
- 1/2 teaspoon ground thyme
- 1 teaspoon Lawry’s seasoning salt
- 1/2 teaspoon black pepper, or more, to taste
- 1/2 cup sour cream
- 6 cups chicken breast, cooked, diced
- 6 cups broccoli florets, or a little more if you prefer
- 1 1/2 cups grated Swiss cheese, divided into one cup and a 1/2 cup
- 1/2 cup grated Parmesan Cheese
Instructions
Prep the Oven and Dish
- Preheat the oven to 375 degree Fahrenheit/190 degree Celsius.
- Spray a 9 inch x 13 inch casserole dish with olive oil or non-stick spray.2 teaspoons olive oil
Cook the Onion and Garlic
- Heat the olive oil in a large 12 inch cast iron skillet over medium-high heat.
- Add the diced onion and cook until they become transparent and soft. (2 to 3 minutes)1/3 cup onion
- Add the minced garlic and cook until fragrant for about 1 minute.1 tablespoon minced garlic
Make the Alfredo Sauce Mixture
- Next stir in the Alfredo sauce, poultry seasoning, ground thyme, Lawry’s seasoning, black pepper, and sour cream until everything is smooth and well combined.15 ounces alfredo sauce, 1/2 teaspoon poultry seasoning, 1/2 teaspoon ground thyme, 1 teaspoon Lawry’s seasoning salt, 1/2 teaspoon black pepper, 1/2 cup sour cream
- Reduce the heat to low and let the mixture start to simmer for 3 to 4 minutes.
Simmer the Chicken
- Add the cooked, diced chicken breast to the sauce mixture.6 cups chicken breast
- Simmer for about 5 minutes stirring a few times so it does not stick.
Prep the Broccoli
- Cut the broccoli into bite-sized pieces.6 cups broccoli florets
- Place the broccoli in a bowl with 1/2 cup of water.
- Cover tightly with plastic wrap and microwave until hot and slightly tender, depending on how cooked you like your broccoli.
- Drain the broccoli.
Combine and Add Cheese
- Gently stir the broccoli into the chicken and sauce mixture.
- Add 1 cup of grated Swiss cheese and gently mix until it’s melted and evenly distributed.1 1/2 cups grated Swiss cheese
Assemble the Casserole
- Transfer the chicken-broccoli-sauce mixture to the prepared casserole dish.
- Top with the remaining Swiss cheese and the Parmesan cheese.1/2 cup grated Parmesan Cheese
Bake and Serve
- Bake until the casserole is bubbling hot and starting to brown on top.
- Serve hot
