These seven layer cookies are one of my favorite desserts when I need something quick and easy but still a little extra special. Everything goes into one pan, and I like that the ingredients are inexpensive and easy to pick up at the grocery store, which makes it a great choice when you need to feed a group without spending much. Every single time I bring these somewhere, they’re the first to disappear. I’ve learned the hard way to grab one early. 😉

- If you’re out of pecans, you can grab walnuts, or leave the nuts out altogether and scatter a little more chips over the top. I’ve done it both ways, and it still cuts the same once it cools.
- Coconut is one people tend to skip, and I’ve left it out or replaced it with another mix-in before when I knew it wouldn’t get eaten. You could also buy toasted coconut, like I did, if you prefer.
- The chips are where I make the most changes. I’ve used peanut butter chips, white chips, and even a mix of whatever open half bags I had on hand.
How To Make Seven Layer Cookies
This easy dessert comes together in one pan without much fuss. Add the layers and pop it into your oven.

Step 1: In a medium-sized bowl, combine the graham cracker crumbs and melted butter. Mix until well combined. Pour the mixture into the prepared pan and press it into an even crust over the entire bottom.
Tip: Gently press the graham cracker mixture just enough so it’s even and settled across the pan. I once packed it too tightly, and it turned hard instead of holding that nice, soft-but-firm base that makes slicing easier later.

Step 2: Sprinkle on the coconut, chocolate chips, and butterscotch chips. Do not mix.

Step 3: Pour the sweetened condensed milk over the top.
Tip: I like to drizzle the sweetened condensed milk slowly and as evenly as I can. Missed spots can lead to dry patches, and nobody wants that.

Step 3: Sprinkle the chopped pecans on top. Bake for 25 to 30 minutes, or until the top is beginning to lightly brown. Remove from the oven and let cool for 5 to 10 minutes. While still warm, gently loosen the bars from the sides of the pan to keep them from sticking, then cut into bars once cooled.
Baking Tip: Make sure not to overbake them. I pull mine when the edges are lightly golden, and the center still looks slightly soft. They keep setting as they cool, so patience here actually works against you.
Quick Tips and Variation Ideas
- When layering, try not to dump everything in the middle. I always spread each ingredient all the way to the edges so every bar ends up with a bit of everything.
- Let them cool before cutting. I know it is tempting to cut into them immediately, but this is what gives you clean, neat squares instead of messy, falling-apart bars. If I want them really perfect, I wait until they’re fully cooled or even slightly chilled.
- One of the best things about this recipe is how easily it fits into any holiday or celebration. You can mix in things like red and green candies for Christmas, pastel chocolates for Easter, or even a handful of mini marshmallows for a twist.

Ingredients
- 1/3 cup butter, melted
- 1 1/2 cups graham cracker crumbs
- 1 cup sweetened coconut flakes
- 1 cup chocolate chips
- 1 cup butterscotch chips
- 14 ounces sweetened condensed milk, canned
- 1 cup chopped pecans
Instructions
Prepare the Pan
- Preheat the oven to 325 degrees Fahrenheit.
- Spray a 13 x 9 inch pan with non-stick cooking spray, making sure to coat the interior sides well.
Make the Crust
- In a medium size bowl, combine the graham cracker crumbs and melted butter.1 1/2 cups graham cracker crumbs, 1/3 cup butter
- Mix until well combined.
- Pour the mixture into the prepared pan and gently press it into an even crust over the entire bottom.
Layer the Filling
- Add the other ingredients in order: coconut, chocolate chips, and butterscotch chips.1 cup sweetened coconut flakes, 1 cup chocolate chips, 1 cup butterscotch chips, 1 cup chopped pecans
- Slowly pour the sweetened condensed milk over the top, covering all the chips.
- Add the pecans to the top. Do NOT mix the layers.
Bake the Bars
- Bake in the preheated oven until melted through, about 30 minutes.
- Remove from the oven and let cool for 10 minutes.
- While still warm, gently loosen the bars from the sides of the pan to keep them from sticking.
- Cut into square bars.

- Store the bars covered at room temperature for up to 3 days. But if your kitchen runs warm, I suggest moving the pan to the fridge.
- To refrigerate, place the cut bars in a sealed container. They keep well for about a week.
