This ham and cheese croissants recipe is perfect for a party or big family gathering. Start by whipping up a quick homemade honey mustard in just 2 minutes. Then, assemble the croissants on a large sheet pan, toast them in the oven, and enjoy warm, melty sandwiches topped with a honey-poppy seed glaze.
In a medium bowl, whisk together the mayonnaise, yellow mustard, honey, apple cider vinegar, onion powder, and salt until smooth.
1/2 cup mayonnaise, 1 tablespoon yellow mustard, 3 tablespoons honey, 1 teaspoon apple cider vinegar, 1/8 teaspoon onion powder, 1/8 teaspoon salt
Use immediately or refrigerate in a sealed container for up to one week.
Assemble the Croissants
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Slice each croissant in half horizontally with a bread knife.

Spread about 1 tablespoon of the honey mustard on the bottom half of each croissant.
Layer 2 slices of ham and 1 slice of Swiss cheese on each croissant, then cover with the top half.

Bake

Add Toppings
Once out of the oven, lightly brush the top of each croissant with the reserved 1 tablespoon of honey and sprinkle with poppy seeds.

Variation Ideas
Cheese: I used Swiss cheese for this recipe; however, thin-sliced cheddar cheese, gouda, or gruyere cheese would be delicious. If you want to add a little heat to your croissant sandwich, opt for pepper jack cheese slices.
Meat: I have also used thinly sliced turkey or chicken to make these croissant sandwiches.
Mustards: Get creative with your homemade honey mustard. Instead of yellow mustard, try Dijon mustard, spicy brown mustard, or whole-grain mustard.
