It only takes 2 minutes to make your own delicious honey mustard. Then, using a large sheet pan, you can easily assemble your ham and cheese croissants and toast them in the oven.  Before you know it, you will have warm, melty cheese and ham croissant sandwiches topped with a sweet glaze of honey and poppy seeds.

When our kids are here with their families, we set a table for 27! Instead of making sandwiches to serve one at a time, I have premade a big batch of ham and cheese croissants with my homemade honey mustard.

When everyone arrives, and we are ready to eat, all I have to do is pop the pan of ham and cheese sandwiches into the oven for a few minutes. This recipe saves me time in the kitchen when feeding our big crowd, giving me extra time for grandkid snuggles. 

Also, I want to point out, this homemade honey mustard is the same recipe when I have grandkids over and serve them chicken nuggets. They love this as a dip!

Grocery List Ingredients and Buying Tips

We will make this big batch recipe super easy for you by choosing presliced cheese and ham and bakery croissants.

Sandwich Ingredients 

  • Bread: I buy the large croissants that our big box club has in their bakery.  That way, all I have to do is slice them in half.
  • Cheese: Make it easy on yourself; buy pre-sliced Swiss cheese. 
  • Ham: The same goes for the ham. I buy thin-sliced deli ham. Keep in mind that the ham will not heat up before the cheese melts if it’s too thick. 

Ingredients For Homemade Honey Mustard 

  • Mayonnaise: Use your favorite brand, just be sure you do not use a sandwich spread like Miracle Whip because that is too sweet for this recipe. 
  • Mustard: To make this classic honeymustad, I use my Homemade Yellow Mustard. However, your favorite brand of yellow squeeze bottle mustard is all you will need. 
  • Seasonings:  Onion powder, a little salt, and a splash of apple cider vinegar
  • Honey: I get our honey from a local beekeeper, but light-grade honey from your grocery store is perfect.

How To Make Ham and Cheese Croissants

To make these ham and cheese croissants, I suggest making the honey mustard first.

  • In a medium bowl, whisk together the mayonnaise, yellow mustard, honey, apple cider vinegar, onion powder, and salt until smooth.

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Slice each croissant in half horizontally with a bread knife.

  • Spread about 1 tablespoon of the honey mustard on the bottom half of each croissant.

  • Layer 2 slices of ham and 1 slice of Swiss cheese on each croissant, then place the top of the bread on the sandwichs.
  • Place the croissants on the baking sheet and bake for 4–6 minutes, keeping an eye on them to prevent over-melting.

  • Once out of the oven, lightly brush the top of each croissant with the reserved 1 tablespoon of honey and sprinkle with poppy seeds.

Variation Ideas

  • Cheese: I used Swiss cheese for this recipe; however, thin-sliced cheddar cheese, gouda, or gruyere cheese would be delicious. If you want to add a little heat to your croissant sandwich, opt for pepper jack cheese slices. 
  • Meat: I have also used thinly sliced turkey or chicken to make these croissant sandwiches.
  • Mustards: Get creative with your homemade honey mustard. Instead of yellow mustard, try Dijon mustard, spicy brown mustard, or whole-grain mustard.

Ingredients
 

Honey Mustard Sauce

  • 1/2 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 3 tablespoons honey
  • 1 teaspoon apple cider vinegar
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon salt

Croissant Sandwiches

  • 6 croissants, large
  • 12 ounces ham, sliced
  • 6 slices Swiss cheese
  • 1 tablespoon honey, for brushing after baking
  • 1/2 teaspoon poppy seeds

Instructions
 

Make the Honey Mustard Sauce

  • In a medium bowl, whisk together the mayonnaise, yellow mustard, honey, apple cider vinegar, onion powder, and salt until smooth.

  • Use immediately or refrigerate in a sealed container for up to one week.

Assemble the Croissants

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Slice each croissant in half horizontally with a bread knife.

  • Spread about 1 tablespoon of the honey mustard on the bottom half of each croissant.
  • Layer 2 slices of ham and 1 slice of Swiss cheese on each croissant, then cover with the top half.

Bake

  • Place the croissants on the baking sheet and bake for 4–6 minutes, keeping an eye on them to prevent over-melting.

Add Toppings

  • Once out of the oven, lightly brush the top of each croissant with the reserved 1 tablespoon of honey and sprinkle with poppy seeds.
