- 1 pound sweet potatoes, small, 8 ounces each unpeeled, cut lengthwise into 1½-inch wedges
- 1 tablespoon olive oil, extra-virgin
- ¼ teaspoon salt
- 1/2 teaspoon cinnamon
- 1 teaspoon sugar
Instructions
Prepare the Potatoes
- Scrub and dry the sweet potatoes thoroughly.1 pound sweet potatoes
- Cut each potato into 1½-inch wedges.
Season the Wedges
- In a small bowl mix the salt, sugar, cinnamon¼ teaspoon salt, 1/2 teaspoon cinnamon, 1 teaspoon sugar
