When we have family staying with us for the weekend, one of my favorite times spent together is the quiet of the morning, with a hearty breakfast and freshly brewed coffee. It’s a time to linger in conversation and enjoy time together. To make breakfast simple yet delicious, I like to prepare one-dish breakfast casseroles.

This biscuits and gravy breakfast casserole is easy to make and pop in the oven while everyone enjoys coffee. If there are any sleepyheads, the smell of just-cooked sausage will linger throughout the house and wake them up.

Since this recipe only requires 15 minutes of prep time and 30 minutes of cooking time, it’s perfect for whipping up on a whim in the morning. You can even prep it the day before and bake the next day before guests arrive. Plus, it serves up to 8 people, perfect for larger crowds or hungry kids!

This casserole only requires a few basic ingredients, most of which you probably already have in your kitchen!

  • Sausage: I use breakfast turkey sausage for this recipe for a lightened-up version but you could also use pork sausage or chicken sausage. This would even be good with Italian sausage if you have it. 
  • Homestyle biscuits: You can buy premade biscuits or make your own biscuits if you like. I use Kroger’s buttermilk biscuits but any kind of buttermilk biscuits or homestyle biscuits will work. 
  • Gravy: To make the gravy, you’ll need unsalted butter, all-purpose flour, and milk. 2% or whole milk is perfect.
  • Seasonings: You’ll need a little salt and pepper for flavor. I also added some onion powder, poultry seasoning (use any kind you like), and crushed red pepper flakes (optional; adjust for spiciness).
  • Whole eggs and Egg whites: A mixture of whole eggs and egg whites makes this recipe a little lighter and helps the casserole to set while baking.

How to Make Biscuits and Gravy Casserole

The following step-by-step instructions break down just how easy it is to make this one-dish recipe!

Grab a large skillet and brown the sausage all the way until it’s fully cooked. Make sure to drain off any grease and then set the sausage aside for later.

In the same pan you used to cook the sausage, melt the butter. Then, sprinkle in the flour, whisking to combine. You want to make sure there are no clumps before adding the milk.

Slowly add in the milk and continue whisking until everything is combined. Add the seasonings and whisk. Keep whisking until the gravy has thickened.

Grab your cooked sausage and add it to the gravy, stirring to combine.

Pop open your can of biscuits and cut each one into quarters. Then, spread the biscuit dough pieces evenly across the bottom of your prepared baking dish.

In a bowl, whisk together your eggs and egg whites. Season with a little salt and pepper to your liking, and set that aside for a moment. Next, pour half of the egg mixture over the biscuit layer.

Gina’s Tips For Recipe Sucess

  • The casserole is done when everything is set and firm. If it still jiggles, leave it in for a couple more minutes until set. 
  • Be sure to drain the grease and use a paper towel to blot up any excess. 
  • Make sure to spray your pan for easy serving so the casserole doesn’t stick!

Why is my casserole runny?

It may be undercooked. If you notice your casserole is still a little jiggly in the center when you take it out of the oven, let it cook a little longer until it sets.

Do I have to make the homemade gravy?

Nope. You can use a packet of country gravy mix instead and add in the sausage.

Storing and Reheating This Biscuit And Gravy Casserole

The casserole will last in the fridge for 3-4 days, according to the USDA. Reheat in the microwave for about a minute or in a 350ºF oven for 15-20 minutes.

Easy Biscuits and Gravy Breakfast Casserole

This Biscuits and Gravy Breakfast Casserole is a stick-to-your-ribs dish made with savory breakfast sausage, eggs, fluffy buttermilk biscuits, and a rich peppered gravy. Perfect for making ahead and serving for breakfast or brunch!

Ingredients
 

  • 16 ounces sausage, seasoned breakfast turkey – you could use pork or chicken sausage too.
  • 4 tablespoons butter
  • 1/3 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt, divided into two 1/2 teaspoons
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon poultry seasoning
  • 1/4 teaspoon crushed red pepper flakes, optional; adjust for spiciness preference
  • 1 can biscuits, 16 ounces can of homestyle biscuits
  • 2 eggs, whole eggs with the yoke
  • 4 egg whites, egg whites only

Instructions
 

Prep

  • Preheat your oven to 350°F (175°C).
  • Lightly grease a 9×13-inch casserole dish with cooking spray or butter.

Make Sausage and Gravy

  • Heat a large skillet over medium heat.
  • Cook the turkey sausage, crumbling it into small pieces as it cooks until no longer pink.
    16 ounces sausage
  • Tilt the pan to drain any grease and spoon it out. Transfer the cooked sausage to a bowl.
  • Return the skillet to medium heat and melt the butter.
    4 tablespoons butter
  • Once the butter is melted, sprinkle in the flour and whisk until the mixture is smooth.
    1/3 cup all-purpose flour
  • Gradually add the milk, about 1/2 cup at a time, whisking constantly until the gravy thickens and starts to bubble.
    3 cups milk
  • Remove the skillet from heat and stir in 1/2 teaspoon salt, black pepper, onion powder, poultry seasoning, and cooked sausage.

Prepare The Biscuits

  • Open the can of biscuits and place them on a cutting board.
    1 can biscuits
  • Using a knife, cut each biscuit into quarters.
  • Evenly spread the biscuit dough pieces across the bottom of the greased casserole dish.

Prepare Egg Mixture

  • In a small bowl, whisk together the 2 whole eggs and 4 egg whites.
    2 eggs, 4 egg whites
  • Add a pinch of salt and pepper to taste, then set aside.

Assemble The Casserole

  • Pour half of the whisked egg mixture over the biscuit dough pieces in the casserole dish.
  • Spoon the sausage gravy mixture evenly over the biscuits and egg mixture.
  • Pour the remaining eggs on top of the sausage and gravy.

Bake The Casserole

  • Cover the casserole dish with foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 10 minutes or until the center of the casserole is set and firm.
  • Let the casserole cool for a few minutes before serving. Slice into portions and enjoy your hearty biscuits and gravy breakfast casserole!
