You can swap regular breadcrumbs or crushed saltine crackers for panko if that’s what you have on hand. Ground turkey or ground chicken can replace the ground beef, though the flavor will be lighter. If you prefer a mushroom-style gravy, sliced mushrooms can cook in the skillet along with the onions. Gluten-free breadcrumbs and flour alternatives can also be used if needed.

How To Make Hamburger Steaks with Onion Gravy

This recipe comes together quickly in one skillet. You’ll brown the patties first, then use the same pan to build the onion gravy before returning the steaks to the sauce.

In a large bowl, combine the ground beef, panko bread crumbs, and onion soup mix. Gently mix until just combined.

Form into four patties about 4 inches in diameter and ½ inch thick. Heat 1 tablespoon of the unsalted butter in a 12-inch nonstick skillet over medium-high heat. Cook the patties until well browned, and the meat reaches 130 degrees Fahrenheit, about 3 minutes per side. Transfer the patties to a platter and tent loosely with foil.

Remove excess grease from the pan if there is more than 2 tablespoons remaining. Add the sliced onions to the skillet and cook over medium-high heat until well browned, about 5 to 7 minutes.

Stir in the flour and cook for 1 minute. Add the beef broth, salt, and pepper, bring to a boil, and cook until the gravy thickens, about 1 minute. Remove the skillet from the heat and stir in the remaining 2 tablespoons of unsalted butter. Spoon the onion gravy over the hamburger steaks and sprinkle with minced fresh parsley.

Tip: If your skillet does not produce enough drippings for the gravy, add a little extra butter before cooking the onions.

These hamburger steaks are great as leftovers the next day. I have had to add a little extra beef broth when reheating the gravy, however.

  • Remove excess grease from the pan if you have more than 2 tablespoons.(note* if your pan does not have much grease from your hamburger I suggest adding 2 extra tablespoons of butter.)
  • Add the onions to the now-empty skillet and cook over medium-high heat until well browned, about 5 to 7 minutes.

  • Stir in the flour and cook for 1 minute.
