Easy To Make Hot and Creamy Rotel Sausage Dip
This dip recipe is a go-to appetizer for our family, especially the guys. It’s a favorite for watching college sports on TV. My favorite part about making rotel sausage dip is I can prepare it a few hours before and then let my crockpot do the cooking. This frees me up to relax while watching the game on TV.
To serve it, I turn the crockpot on warm when its done. That way, it won’t scorch and will stay warm and gooey for several hours.
To serve, I like to have a variety of scoops.
- Tortilla chips: Use as a scoop or pile up some chips for a great plate of nachos.
- Corn chips
- Thick ridged potato chips
Keep a serving spoon on a spoon holder next to the crockpot for easy serving and cleanup. This will allow your guests to help themselves throughout the party.

Ingredients You Will Need
- Sausage: I use a 1 lb roll of mild pork sausage, browned and drained well. If you prefer, you can use hot sausage, spicy Italian sausage, ground turkey sausage, or even chorizo for a different flavor and heat level.
- Rotel Tomatoes and Green Chilies:I do not like my dips super spicy, so I use one can of mild Rotel and one can of spicy. If you like hot spice, by all means, kick it up with two cans of spicy Rotel.
- Cheeses: For this recipe, we need some creamy cheeses. I use Velveeta and cream cheese cut into cubes for easy melting.
- Cilantro: This is optional if you do not like cilantro.

How-To Make This Cheesy Sausage Dip
Cook The Sausage
In a large skillet, brown the ground sausage until all the pink is gone.
Drain Off Fat
Don’t skip this step; draining off the excess grease from your sausage will make your cheese dip less greasy and more tasty.
Mix It Together
Add all the other ingredients into the slow cooker. Easy, right?
Stir and Cook
- Stir to combine the ingredents. Don’t worry about it combining all together, it will melt in the crock pot as it cooks.
- Cover and cook on low for 2 to 3 hours or until melted.
Uncover and Stir
Remove the lid, then stir until well blended. This will take about a minute to get everything combined and smooth.
Ready To Serve
Turn your crock pot to warm and serve with tortilla chips or another favorite scoop.
Variations
- Spicy: To make your dip spicier, add 2 tablespoons of diced fresh jalapenos.
- Hearty: Add a can of pinto beans that have been drained.
- Meats: You could substitute the sausage for ground beef, shredded chicken,
- Veggies: 1/3 cup of diced green peppers, green onions, or canned corn.
Leftovers
- Storage: To store leftover Rotel sausage dip, transfer it to an airtight container and refrigerate it promptly. It should be eaten within 3-4 days.
- Reheat: To reheat, simply scoop the desired amount into a microwave-safe bowl and heat in 30-second intervals, stirring in between, until it reaches the desired temperature. This dip is thick, so it would probably scorch if you heated it on the stovetop. you could also put it back into a crock pot and heat on warm for 1 hour or so.
