This is one of my favorite recipes for entertaining (it’s a classic Sunday dinner recipe!) because it leaves me more time to spend with my guests instead of hiding out in the kitchen trying to get dinner on the table. With a few simple ingredients, you can transform meat and veggies into a cozy and impressive meal.

  • Flavor: This recipe is so flavorful. Beef and Worcestershire sauce is such a great combination, and all of the ingredients work together to make an impressive dish that doesn’t take a lot of work to make. The juices that come out of the meat and vegetables are the perfect gravy to soak up with some crusty bread. 
  • Easy: The Crock Pot is a valuable tool and one of my most-used pieces of kitchen equipment. It makes cooking very easy, especially if you’re just learning how to cook. It’s the best for when you know you have a busy day ahead of you. You can set up the roast in the morning and come home to a meal that’s ready to enjoy. 
  • Best Part: I love how this recipe makes amazing leftovers. You can freeze them to enjoy another time, make sandwiches, or totally transform them into something new. And it’s incredibly versatile – you can really make this recipe with any vegetables you have on hand. Slow Cooker Sirloin Tip Roast Ingredients

To make this savory slow cooker sirloin recipe, you’ll need some basic ingredients that you probably keep in your pantry and fridge.

  • Sirloin tip roast – The sirloin tip roast is a lean cut of beef that comes from the hind legs of the cow. It is most often made into roasts, steaks, and ground beef. It’s a tougher cut of meat, which makes it the perfect candidate for the Crock Pot.

    Tip: Choose a roast that will fit comfortably inside your slow cooker and has an even shape for the best and most tender results.
  • Carrots, onions, and celery – This classic combination of aromatic vegetables gives lots of flavor the the gravy that forms as the roast cooks in the Crock Pot. You can use any variety of onion that you like, but I usually use a yellow onion.
  • Potatoes – Using baby potatoes with the skins on keeps the potatoes from falling apart as they cook for hours in the Crock Pot. You can use gold or red potatoes, but I like the bags of mixed baby potatoes for a little variety (and the purple ones are really fun).
  • Worcestershire sauce – Worcestershire sauce and beef are a match made in heaven. Worcestershire sauce is made by fermenting anchovies, salt, and tamarind (a super-tart tropical fruit). The result is an incredibly funky and savory sauce that is perfect in beef stews and roasts. Don’t leave it out – it really makes the dish flavorful.

Secret To A Juicy Roast

This slow cooker meal is easy to make and has a lot of flavor from the herbs and seasonings, but it might have a few steps you haven’t done before. Don’t worry, none of this is difficult! 

Searing the roast before you put it into the slow cooker adds an even deeper flavor the the sauce, and it helps the meat to stay super moist as it cooks.

How to Make Slow Cooker Sirloin Tip Recipe Step-By-Step

  1. Heat some olive oil in a large skillet over medium-high heat and sear the sirloin roast on all sides. Resist the urge to flip the roast more than once per side – give it enough time to get brown on its own. When the roast lifts away from the pan easily, it’s ready to flip.

  1. While you sear the roast, chop the vegetables. Peel the onion and cut it into quarters, then trim the celery and cut it into large pieces. Give your potatoes a good scrub to remove dirt. Finally, peel the carrots and chop each one into about three pieces, but don’t worry too much about being precise. 
  2. Add the cut vegetables and potatoes to the bottom of your slow cooker.

  1. Next, lay the siered roast on top of the vegetables.

  1. In a bowl or measuring cup, combine the beef broth, Worcestershire sauce, vinegar, soy sauce,  spices, salt, and black pepper. Whisk to combine.

  1. Slowly pour the mixture over the roast and vegetables in the slow cooker.

  1. Cook the roast on high heat for 6 hours or low heat for 8 hours.
  2. The meat is ready when it is easily pulled apart with a fork. Use two forks to shred the beef right in the Crock Pot and stir it in with the vegetables and the juices that have collected in the Crock Pot. 

Serve the roast by itself with the vegetables, with some buttered egg noodles, or a loaf of crusty bread.

This is a really easy recipe; however, here are a few quick tips when making this recipe.

Slow Cooker Cooking Tips

Plan ahead! This dish is at its most tender and flavorful when you have the time to cook it for at least 8 hours on low heat. If you’re in a crunch, you can cook it on high for 6 hours. The results will still be tasty but not as tender as beef cooked low and slow.

Using Fresh Herbs vs Dried Herbs

Dried herbs give the roast lots of flavor, but you can use fresh herbs and garlic instead. Dry herbs have a more intense flavor than fresh, so you should plan to use about triple the amount of fresh herbs as you would dry ones. 

How To Properly Layer Ingredients In A Slow Cooker

The USDA recommends adding vegetables to a slow cooker before meat because vegetables take longer to cook. This is especially true for dense vegetables like potatoes and carrots. 

Placing meat on top of vegetables helps them taste great and also helps the meat to cook evenly. The vegetables prop up the roast away from the direct heat of the bottom of the Crock Pot, ensuring slow and even cooking. 

How To Make Thick Gravy For Slow Cooker Roast

If you prefer a thicker gravy, here is an easy and very tasty way to thicken your gravy.

  1. Place 2 tablespoons of cornstarch in a jar with a tight-fitting lid.
  2. Add 1/4 cup heavy whipping cream and 1/3 cup of water or cold beef broth.
  3. Place the lid on the jar and give it a good shake for about 10 seconds.
  4. Spoon off or pour off the cooking liquid into a medium size pan when the roast is done cooking.
  5. Bring the pan of meat juices to a hard boil.
  6. Carefully whisk in the slurry mixture. Stir until thickened, about 1 minute. Salt and pepper to taste.

Recipe FAQs

Does this recipe work with other cuts of beef? 

I love using sirloin tip roast for this recipe, but you can make it with a chuck roast, beef shanks, rump roast, or short ribs. Whatever cut you use for this recipe, slow cooking ensures it will turn out juicy and fall-apart tender. You can also make it with cubes of beef stew meat – any way you make it, this recipe is delicious and crowd-pleasing.

Can I make this recipe without a Crock Pot? 

This beef roast can be made in the oven. Simply load all of the ingredients into a Dutch oven with a tight-fitting lid and place it into a 300 F oven for about six hours. You can also make it in an Instant Pot or other electric pressure cooker on its slow cooker setting if you don’t own a dedicated Crock Pot. Just be sure. to follow Instant Pot cooking guidelines.

Smart Shortcuts

You can buy a bag of pre-cut vegetables at the store to save on time and dirty dishes. 

Prep the recipe the night before a busy day. Sear sirloin roast, prep the veggies, and mix the seasonings and broth in a jar. Keep all ingredients refrigerator in a separate container. The next morning, assemble all the ingredients into your slow cooker, then set it and forget it. Note* It is not safe to combine raw meat with other ingredients the night before. Assemble when you are ready to cook.

How to Store Leftovers

This great recipe makes a lot of food, and the leftovers might be even tastier than eating it right away. 

In the fridge –   Store the beef, vegetables, and gravy in an airtight container in the refrigerator for up to four days. 

In the freezer –  I wouldn’t freeze the vegetables since they’ll already be super soft after cooking for so long, and freezing and thawing them would make them fall apart completely. Store the shredded beef in the leftover juice in an airtight container and freeze for up to three months. 

How to reheat –  If you freeze your beef, thaw it overnight in the refrigerator or on the counter. Heat the beef in the sauce in a pan on the stove or right in the container in the microwave. If you choose to heat it in the microwave, heat it in two-minute increments and stir in between until all of the beef and sauce is heated through. 

How to use up leftovers –  If you have leftover beef, it makes an excellent French dip sandwich. Strain the broth leftover from cooking and heat the shredded beef in it, then pile the beef onto a fresh roll and top with a few slices of your favorite cheese – I like Swiss. Dip your sandwich in the leftover au jus broth and enjoy a hearty and savory meal that uses up your leftovers.

You can also use it to make a meat pie with a pie crust or you can top it with mashed potatoes for a twist on a Shepherd’s Pie. You can stir in extra veggies like frozen green beans or peas to add some fresh flavor. 

Make It A Meal

Slow cooker sirloin is such a hearty dish you only need a few easy side dishes – keep it simple with a bag of buttered egg noodles to smothered in gravy or sop it up with a loaf of crusty bread. There are already vegetables alongside the beef in the slow cooker, making it a complete meal on its own, but another vegetable side, like asparagus or sweet corn, is an excellent addition to your meal.   

Need to feed a crowd? Add to the meal a loaf of chewy beer bread, roasted Brussels sprouts, and a simple but impressive green salad paired with my homemade Caesar dressing.

  • 3 pounds sirloin tip roast
  • 2 tablespoons olive oil
  • 2 pounds potatoes, small white or red potatoes
  • 4 medium carrots, peeled and sliced into 3-inch pieces
  • 4 stalks celery , sliced into 3-inch pieces
  • 1 onion, medium white or yellow, peeled and quartered
  • 2 cups beef broth
  • 4 tablespoons apple cider vinegar
