Ingredients Needed For This Recipe
Note: A full ingredients list, with measurements, is provided in the recipe card directly below.

- Chicken: Boneless, skinless breast meat: Use boneless skinless chicken breasts. If you purchase thick chicken breasts, slice them in half. You could also use boneless skinless thighs or tenders.
- Cream of chicken soup
- Cream of mushroom: We all have that family member that doesn't like mushrooms, so you can substitute celery if needed.
- Water: Fill one soup can with water
- Onion: I like to use a sweeter onion, such as Vidalia. Dice small.
- Garlic powder
- Minute Rice: Do not use regular rice. It will become mushy after cooking. I use brown rice, but regular white minute rice would also work.
- Onion soup mix: You can make your own Authentic Tasting Copycat Lipton Onion Soup Dip Recipe or buy a box of packets.

Make your own Copycat Lipton Onion Soup Mix
I have a healthier copycat version of the classic Lipton Onion Soup Dip Recipe without all the preservatives in the box mix. It takes less than 5 minutes to make using everyday pantry staples. Just omit the sour cream and stir the dry soup mix in with your cream soups and water.

How To Make Slow-Cooker French Onion Chicken
1. Place a slow cooker liner bag in your slow cooker bowl or spray it with a little cooking spray for easy cleanup.
2. In a medium size bowl mix, minute rice, diced onions, garlic powder, pepper and both cans of soup, and 1 can of water. Also, mix in half a packet of the dry onion soup mix. Save the other half for topping. Whisk until creamy and smooth.

3. Add 1/2 of the mixture to the slow cooker, then place chicken on top.

4. Spread the rest of the mixture on top of the chicken.
5. Place the lid on the slow cooker. Cook on high for 3.5 hours or until the chicken reaches 165 degrees internal temperature.
Tips For Making This Recipe
- Meat: You can also use boneless skinless thighs or tenders instead of breast meat if desired or a combination of both. Just be sure they are close in size so they cook at the same rate.
- Onions: If you have time, sauté the sliced onions in a nonstick skillet before adding them to the slow cooker for extra flavor. This will also mellow and sweeten the onions.
- Rice: For best results, use quick-cooking Minute Rice or similar. Do not use regular long-cooking rice, as it won't have enough time to cook properly in the slow cooker.
- Leftovers: Store leftovers in an airtight container or freezer bag in the refrigerator for up to 3 days. The flavors will continue to develop as they sit.
How To Know If Chicken Is Fully Cooked 🐓
It's important to cook chicken thoroughly. Nobody wants a tummy ache from uncooked poultry.
- Shrinkage: When the chicken is done cooking, it will shrink a little bit from its original size.
- Give it a poke: If you poke the chicken with a fork and the juice is tinged pink, it is not done. The goal is to have clear juice flow out when poked.
- Cut and peek: Cut into the center of your chicken with a sharp knife. Pull it open just a bit. If you see any pink in the meat, it must be cooked longer.
- Take its temperature: The best way to be sure chicken is thoroughly cooked is to use a meat thermometer. Chicken must have an internal temperature of 165 degrees to be done. I like to use a ThermoPro thermometer. It tells me on the timer the proper temperature for all different kinds of meat. This is handy.
Variation Ideas
- Use low-fat milk like skim milk or 1% instead of water if desired.
- Use different types of cream soups, such as cream of celery or cream of broccoli, for a different flavor.
- Substitute chicken tenders for the breasts if desired. This would be great for kids, and you can reduce the cooking time by 30 minutes.
- Add mushrooms, bell peppers, yellow onions or sweet onions, and other vegetables to the slow cooker before turning it on for extra nutrition and flavor.
- Swap out the brown Minute Rice for white Minute Rice rice, Jasmine Minute Rice or Minute Multi-Grain Medley Brown Rice, Red Rice, Wild Rice Quinoa if desired.
- Add in some sour cream the last 10 minutes of cooking for an extra creamy dish.
- Cook with a bay leaf, or add a bit of Worcestershire sauce for extra flavor. Be sure to remove the bay leaf before serving to avoid choking.
Topping Ideas
- Top with some caramelized onions for extra flavor and crunch.
- Top with melted cheese before serving if desired. Parmesan cheese or swiss cheese works great, or you can make it fancy with some gruyere cheese.
- Sprinkle on some dried french onions and a bit of chopped fresh parsley
