With just a few minutes of preparation, you can have it simmering in your crock pot in no time. In fact, it takes less than 15 minutes to get everything ready and start the cooking process.
1/3cupbell pepper diced small ( use a variety of colors, red, green, orange or yellow)
1cupcelery diced very small
1cuponion diced small
2poundsground beef 90% extra lean
20ouncetomato sauce
1 14ozstewed tomatoescanned, slightly purred with a blender
2teaspoonscumin
2 tablespoonstaco seasoninghomemade taco seasoning or store bought
1teaspoononion powder
1teaspoongarlic powder
1 1/2teaspoonchili powdermild
2teaspoonssalt
2tablespoonssugar
1 14ozpinto beanscanned, rinsed and drained
1 14ozkidney beans canned, rinsed and drained
2cupscorncanned, drained
2cupswater
1tablespoonjalapenos chopped fine, seeds removed, optional: only if you want it spicy
Instructions
Dice the onions, green pepper, and celery into small bite-size pieces and set aside.

In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.

Place the cooked ground beef into the slow cooker.
Take the canned stewed tomatoes and slightly puree them using a blender. This will give the soup a smoother consistency. Pour them over the cooked ground beef.
