  • Ground beef: Use a low-fat lean ground beef such as an 85/15 % fat. 
  • Onions: I use white or yellow onions when making this soup. 
  • For added convenience, canned corn is my go-to choice for this slow cooker taco soup recipe. However, fresh corn can also be a delicious option. Simply cut raw corn off the cob and incorporate it into the ingredients before cooking. You could also use frozen corn as well. The choice is yours!
  • Taco seasoning: I suggest making your own homemade taco seasoning. If you want a short cut then premixed packets of taco seasoning will work as well. 
  • Jalapeno: Adding in a diced jalapeno or two is optional. You be the judge of your spice level.

  • Veggies: Add more veggies, such as bell pepper in a variety of colors, canned diced green chilis, cubed butternut squash, chopped kale, or mushroom slices.

Refrigerating Leftovers

  • Allow the taco soup to cool down slightly before storing. You can speed up the process by placing the pot in an ice bath.
  • Divide the soup into smaller, airtight containers. This allows for quicker cooling and ensures that reheating is more efficient.
  • Label each container with the date of preparation to help keep track of its freshness.
  • Stored properly, leftover taco soup can be refrigerated for up to 3-4 days.

Freezing Leftover Taco Soup

  • Cool the soup completely in the refrigerator before freezing. Rapid cooling helps maintain the soup’s quality.
  • Use freezer-safe containers or heavy-duty freezer bags to prevent freezer burn. Leave some space at the top of the container as the soup may expand when frozen.
  • Clearly label each container with the name and date of preparation. Frozen taco soup is best used within 2-3 months for optimal flavor.

Reheating Taco Soup

Stovetop Method

  • If reheating from the refrigerator, transfer the soup from the container to a pot.
  • Heat the soup over low to medium heat, stirring occasionally. Add a bit of water or broth if needed to maintain the desired consistency.

Easy Microwave Heating

  • For smaller portions, use a microwave-safe bowl.
  • Cover the bowl to prevent splatters and heat on medium power, stirring every 60 seconds until hot.

Super Easy Recipe For Slow Cooker Taco Soup

This easy slow cooker taco soup recipe is a family favorite as well as one of my Pinterest follower's top favorites. Preparing this slow cooker taco soup is very easy. With just a few minutes of preparation, you can have it simmering in your crock pot in no time. In fact, it takes less than 15 minutes to get everything ready and start the cooking process.

Ingredients
 

  • 1/3 cup bell pepper , diced small ( use a variety of colors, red, green, orange or yellow)
  • 1 cup celery , diced very small
  • 1 cup onion , diced small
  • 2 pounds ground beef , 90% extra lean
  • 20 ounce tomato sauce
  • 1 14 oz stewed tomatoes, canned, slightly purred with a blender
  • 2 teaspoons cumin
  • 2 tablespoons taco seasoning, homemade taco seasoning or store bought
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoon chili powder, mild
  • 2 teaspoons salt
  • 2 tablespoons sugar
  • 1 14 oz pinto beans, canned, rinsed and drained
  • 1 14 oz kidney beans , canned, rinsed and drained
  • 2 cups corn, canned, drained
  • 2 cups water
  • 1 tablespoon jalapenos , chopped fine, seeds removed, optional: only if you want it spicy

Instructions
 

  • Dice the onions, green pepper, and celery into small bite-size pieces and set aside.
    1 cup onion, 1/3 cup bell pepper, 1 cup celery
  • In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
    2 pounds ground beef
  • Place the cooked ground beef into the slow cooker.
  • Take the canned stewed tomatoes and slightly puree them using a blender. This will give the soup a smoother consistency. Pour them over the cooked ground beef.
    1 14 oz stewed tomatoes
  • Add tomato sauce and stir with ground beef.
    20 ounce tomato sauce
  • Stir in seasonings.
    2 teaspoons cumin, 2 tablespoons taco seasoning, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 1/2 teaspoon chili powder, 2 teaspoons salt, 2 tablespoons sugar
  • Next add beans, chopped vegetables, and corn and the water. Stir well.
    1 14 oz kidney beans, 1 14 oz pinto beans, 2 cups corn, 2 cups water, 1 tablespoon jalapenos
  • Place the lid on the slow cooker and cook on low heat for 6-8 hours or on high heat for 3-4 hours.
