Ingredients You Will Need For Chocolate Covered Pickles

Grab these ingredients because we’re about to dive into the deliciously weird world of chocolate covered pickles.

  • Pickles: Choose sliced bread-and-butter pickles that are labeled as “crunchy” or “extra crispy” in jars. To make dipping easier, go for small to medium-sized pickles.
  • Chocolate Chips: Look for dark chocolate chips with at least 50-70% cacao for a richer taste.
  • Coconut Oil: The best chocolate covered pickles use refined coconut oil to prevent overpowering the taste of chocolate and pickles.

Variations and Substitutions

  • Swap bread-and-butter pickles for dill pickles to make a tangier chocolate covered dill pickles version.
  • For a milder flavor, replace pickles with cucumber spears.
  • Use dairy-free chocolate to make the chocolate covered recipe vegan.
  • Add cinnamon or pumpkin spice to add warmth to the melted chocolate.
  • Want a more robust or deeper flavor? Mix in a little espresso powder.
  • Stir in a few drops of peppermint extract to make the chocolate dip more refreshing.
  • Double dip your pickles with dark chocolate and white chocolate for a decorative finish.
  • I like to use pickle slices, but you can experiment with other shapes like pickle rounds or whole pickles. If you’d like to cover the whole pickle in chocolate, poke a cocktail stick into one end of the pickle.

How To Make Chocolate Covered Pickles

Get ready to melt the chocolate, dip those pickles, and make the quirkiest snack time of your day!

To start, lay your pickle slices on paper towels in a single layer. Get another paper towel and gently pat each pickle dry to soak up any moisture on the surface. Your goal is to keep the pickles as dry as possible to help the chocolate stick better.

Hand placing a paper towel over rows of sliced pickles on a white marble surface.

Once all your pickles are dry, transfer them to a bowl. Sprinkle a small amount of sugar, then gently toss to coat each piece evenly. You’ll want to let the sugared pickles sit for about 15 minutes to give the sugar time to dissolve slightly and meld with the pickles (don’t be alarmed when you notice a slight softening of the pickle’s exterior because its core remains crunchy).

Place your chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each session to prevent overheating. Keep doing this until the chocolate is completely melted and smooth.

Once done, stir in the coconut oil to thin the chocolate slightly and make it easier to coat the pickles later.

This is where the fun part starts! Once your melted chocolate is ready, hold a pickle slice by the edge and dip it halfway. After dipping, place the dipped pickles on a parchment paper-lined baking sheet to prevent sticking.

While the chocolate is still soft, sprinkle your favorite toppings over the chocolate-dipped portion (work quickly because the chocolate starts to set fast when it touches the cool pickles). I like to garnish my chocolate covered pickles with flaky salt to add another layer of flavor and a delightful crunch. Other toppings you can try include crushed pretzels, chopped nuts, or chili flakes.

Finally, transfer the tray of dipped pickles to the fridge and chill for about 15 minutes or until the chocolate hardens completely. Once set, you can serve them immediately or store them for later. For the best flavor experience, pair these treats with crackers, fresh fruits, or tea.

Gina’s Tips For Recipe Success

  • No microwave? Melt the chocolate on the stovetop using a double boiler.
  • Serve these chocolate-covered pickles chilled for the best flavor and texture.
  • Make sure that your pickles are completely before dipping them in chocolate, or the chocolate will only slide off.
  • To make easy chocolate covered pickles, use pre-sliced pickle chips.
  • Keep your melted chocolate away from water because even a tiny drop can cause it to become grainy.

Leftover Tips

Transfer your leftovers immediately to an airtight container to keep the chocolate-covered pickles fresh, crunchy, and delicious. If there are too many, place a parchment paper between layers to prevent sticking to one another. Once ready, refrigerate the container for up to 2 days.

These treats taste best cold, so you can serve them directly from the fridge. If you notice that the chocolate has developed any white film, gently pat the pickles with a paper towel to remove excess moisture.
