  • Shortbread cookies: These biscuit-style cookies are used to make the cake’s crust. To ensure quality, look for reputable brands like Pepperidge Farms Dublin shortbreads.
  • Butter: Choose the sweet cream butter, as its mildly sweet flavor complements the rich ice cream layer.
  • Chocolate syrup: To make your ice cream cake, replicate a Twix bar and top the cake with chocolate syrup. If possible, choose a milk chocolate flavor to match the milk chocolate from Twix.
  • Caramel syrup: Twix candy combines chocolate and caramel flavors, so you want to pick up a bottle of squeezable caramel syrup on top of the cake.

Crumble The Shortbread Cookies

  • Add the shortbread cookies inside a food processor.
  • Pulse until the cookies are turned into fine crumbs.

Add The Butter

  • Melt the butter in short intervals of 20-30 seconds in the microwave or in the saucepan over low-medium heat.
  • Pour the melted butter into the food processor of cookie crumbs.
  • Mix until fully combined.

Layer Crumbs In The Pan

  • Place the fine crumb mixture in a single layer of a cake pan.
  • Press to form a solid crust.
  • Freeze for 20 minutes to set.

Chop The Twix Bars

  • Using a knife, cut the Twix bars into bite-sized pieces on a chopping board.
  • Set aside some for the topping.

Add Twix To The Softened Ice Cream

  • In a large bowl of softened ice cream, add the chops of Twix bars. 
  • Mix the two ingredients to fully combine.

  • Freeze for at least six hours or overnight.
  • Spread the ice cream layer over the frozen crust evenly.
  • Cover the cake pan with foil or plastic wrap.

Gina’s Tips For Recipe Success

  • Before using the ice cream in the recipe, leave it at room temperature for 10-15 minutes to soften and spread easily over the crust.
  • Line the cake pan with parchment paper or use a springform pan for easy removal.
  • Let the cake rest at room temperature for about 10 minutes to make it easier to cut into slices.
  • Use a warm knife to cut the cake into clean slices before serving.

Ingredients
 

  • 5.5 ounces shortbread cookies, Pepperidge Farms Dublin or your favorite brand
  • 1/4 cup butter, melted
  • 5 cups vanilla ice cream, softened
  • 9.7 ounces TWIX Caramel Minis Candy Bars, chopped and divided
  • 1/4 cup chocolate sauce
  • 1/3 cup caramel sauce

Instructions
 

  • Grease an 8×8-inch baking dish with non-stick spray. Set aside.

Make the Crust:

  • Place shortbread cookies in a food processor. Pulse until you have fine crumbs.
    5.5 ounces shortbread cookies
  • Pour the melted butter and crumbs into the food processor. Pulse to combine until the butter and crumbs are well blended.
    1/4 cup butter
  • Press the mixture evenly into the bottom of the pan. Freeze for 20 minutes to set.

Add the Ice Cream Layer:

  • In a bowl, mix the softened vanilla ice cream with 2/3 of the chopped TWIX pieces.
    5 cups vanilla ice cream, 9.7 ounces TWIX Caramel Minis Candy Bars
  • Spread this ice cream mixture evenly over the frozen crust.
  • Cover the baking dish with plastic wrap or foil and freeze for at least 6 hours or overnight for best results.

Add Toppings and Serve:

  • Once frozen and ready to serve, drizzle the chocolate and caramel sauce over the ice cream cake.
    1/4 cup chocolate sauce, 1/3 cup caramel sauce
  • Sprinkle the remaining chopped TWIX pieces on top.
  • Slice into squares and serve immediately.

  • Softening the Ice Cream: Let the ice cream sit at room temperature for about 10 minutes before mixing in the TWIX pieces. This will make it easier to spread.
