How To Make Smores Brownies

This is an easy and quick recipe to make using a box of brownie mix and classic smores toppings.

To make this recipe super easy, start with a fudgy boxed brownie mix. Mix and bake according to the box directions in a 10 x10 baking dish.

While the brownies are baking, I like to use the time to prep the s’mores topping. Start by breaking graham crackers into bite-sized pieces, then do the same with your chocolate bars. Be sure to save about nine pieces of chocolate to decorate the top after everything has melted. Next, grab some kitchen scissors and cut the large marshmallows in half so they’ll be ready to go when the brownies come out of the oven.

When the brownies come out of the oven, I let them cool for about five minutes before diving into the fun part—adding the s’mores topping! Start by spreading the broken graham crackers evenly across the surface, followed by the marshmallow halves and chocolate pieces. This step is where the magic happens, so don’t worry about perfection—just make sure every bite will have a little of each topping!

Now, switch your oven to the low broil setting. Carefully put the brownies back in and keep a close eye on them, checking every 60 seconds or so. The marshmallows will toast quickly, so don’t walk away—they should get a nice golden brown. As soon as they do, take the brownies out of the oven.

  • 1 box chocolate fudge brownie mix, 18.4 oz – Plus ingredients required on the box. Typically eggs, oil, and water
  • 9 graham crackers, broken into bite-sized pieces
  • 4 chocolate bars, 1.55 oz each, milk chocolate recommended
  • 4 cups large marshmallows, cut in half

Instructions
 

Prepare the Brownie Mix

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, prepare the brownie mix according to the package instructions. This typically involves mixing the brownie mix with eggs, oil, and water.
    1 box chocolate fudge brownie mix
  • Line a 10×10 baking dish with parchment paper or grease it with nonstick cooking spray.
  • Pour the brownie batter into the prepared dish, spreading it evenly.
  • Bake the brownies as directed on the box (usually 25–30 minutes) or until a toothpick inserted in the center comes out with a few moist crumbs. Baking times may vary by oven.

Prepare the Smores Topping

  • While the brownies are baking, break the graham crackers into small bite-sized squares.

  • Break the chocolate bars into individual squares. Set aside 9 pieces for garnish after melting.

  • Cut the marshmallows in half using kitchen scissors.
    4 cups large marshmallows

Top the Brownies

  • Once the brownies are baked, remove them from the oven and let them cool for 5 minutes.
  • Sprinkle the broken gram crackers, marshmallows, and chocolate squares evenly on top of the baked brownies, ensuring the entire surface is covered.
  • Turn the oven to low broil and place the s'mores-topped brownies back in. Check the progress of melting and toasting the marshmallows every 60 seconds. Do not leave the oven because the marshmallows can burn in a moment. Once they are toasted light brown, remove the pan of brownies from the oven.
  • You can serve the brownies warm and gooey or allow them to cool and slice into squares.
