    🛒 Ingredient notes

    This is the easiest cookie recipe with only 4 ingredients. You can keep the pantry staples on hand then when last-minute guests pop in or you forgot to make a gift you will be the star with warm cookies coming out of the oven.

    • One box of yellow cake mix: This is not brand specific just use your favorite.
    • Eggs: When baking with eggs in the recipe it is best to allow them to come to room temperature on the counter before mixing in.
    • Coconut oil: I like to use butter-flavored coconut oil. Be sure the oil is melted to liquid form. You could also use vegetable oil if you prefer.
    • M&Ms: Let your imagination go. There is a variety of flavored M&Ms on the market during Christmas. This recipe calls for plain milk chocolate M&Ms but don't feel limited to just these.

    🔪 Step by step instructions

    One thing nice about making this recipe it only requires one bowl, spoon, and a baking sheet. Clean-up is easy.

    Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper and set it aside.

    1. Break eggs into a large bowl, whisk them together for about 30 seconds.
    2. Add cake mix and butter flavored coconut oil.

    3. Stir until the dough is mixed together well.

    4. Add M&Ms

    5. Stir in the M&Ms. The best way to do this is with a large wooden spoon, folding them in gently so they do not break apart.

    6. Using a cookie scoop, make even-sized dough balls and place them on the parchment cookie sheet.

    Bake cookies at 350 degrees for 12- 15 minutes. You want them to be slightly light brown.

    Remove them from the oven, wait one minute and then move them to a cooling rack.

    🍪 How to make a cookie tray

    1. Start with a large tray that has a slight edge. This will help the cookies stay in place when moving the tray.
    2. Be sure your cookies are room temperature before you place them on the tray.
    3. Try to get a variety of cookies when deciding what to put on the tray. Try a sweet and salty like Bacon Pretzel Chocolate Chip Cookies. Add some nutty cookies like Pistachio Cranberry Cookies or Vegan Peanut Butter Cookies. Be sure to put some old-fashioned holiday favorites like Blackstrap Molasses Cookies.
