I created this homemade dressing to taste just like Panera’s Apple Fuji Salad Dressing. It keeps well in the refrigerator for up to one week.

  • Apple juice: I usually go with 100% bottled juice, but apple juice from concentrate works just fine too. It gives the dressing its natural sweetness and fruity base.
  • White balsamic vinegar: This type of vinegar is a little milder and sweeter than regular balsamic—it’s perfect here. If you don’t have any, apple cider vinegar makes a great backup.
  • Honey: This helps balance the tartness with a smooth sweetness. If you’re going for a vegan version, maple syrup swaps in beautifully.
  • Olive oil: I recommend using extra virgin, cold-pressed olive oil. It adds a fresh, slightly fruity flavor that blends well with the apple and spice notes.
  • Seasonings: We keep it simple but flavorful with garlic powder, onion powder (make sure it’s not onion salt), ginger powder, cinnamon, salt, and pepper.

Toss all the salad ingredients (greens, apples, onion, cranberries, and walnuts) into a large bowl.
